5Hearty Lentil and Zucchini Skewers with Marinara
These flavorful lentil 'meatballs' threaded with tender zucchini and served with a bright marinara make for a delightful and satisfying meal.
How to make it
- 1
First, prepare the lentil mixture. In a large bowl, mash the cooked brown lentils slightly with a fork. Finely dice the yellow onion and add it to the mashed lentils. Stir in the panko breadcrumbs. Season with a little salt and pepper to your liking.
- 2
Next, form the lentil balls. Roll the lentil mixture into about 16 small balls, each about 1 inch in diameter. If the mixture is too sticky, you can add a tiny bit more breadcrumbs to help it hold its shape.
- 3
Now, prepare your skewers. Cut the zucchini into 1 inch thick rounds. Carefully thread the lentil balls and zucchini rounds alternately onto 8 skewers.
- 4
Time to cook the skewers! Heat a grill pan or outdoor grill to medium high heat. Lightly brush the skewers with a little olive oil to prevent sticking. Grill for 3 to 4 minutes per side, until the lentil balls are lightly browned and the zucchini is tender crisp. Alternatively, you can bake them at 400°F (200°C) for 15 to 20 minutes, flipping them halfway through.

Finally, serve with marinara. Gently warm the marinara sauce on the stovetop or in the microwave. Serve your delicious grilled lentil and zucchini skewers immediately with the warm marinara sauce for dipping or spooned right over them.
