⏱️ Cooking Time: 20 minutes | 🍽️ Servings: 1

Instructions

  1. 1.
Rinse 1/2 cup of quinoa under cold water using a fine-mesh sieve to remove any bitterness. Cook the quinoa in a small saucepan with 1 cup of water over medium heat. Once it reaches a boil, reduce to a simmer, cover, and cook for 15 minutes until all water is absorbed and quinoa is fluffy. If water remains, continue cooking uncovered. Let cool slightly.
  2. 2.
While the quinoa is cooking, halve 1 cup of cherry tomatoes and dice 1 small avocado. Squeeze the juice of 1 lime over the avocado to prevent browning and enhance flavor. This also adds a zesty brightness to the dish.
  3. 3.
In a mixing bowl, combine the cooked quinoa, diced avocado, and cherry tomatoes. Pour over 2 tbsp of extra virgin olive oil. Stir gently with a spatula to combine without mashing the avocado.
  4. 4.
Adjust seasoning with salt and pepper to taste. The olive oil adds richness while the lime juice provides acidity; balance to your taste preferences. If the mixture is too dry, a small splash of olive oil can correct this.
  5. 5.
Serve immediately in a bowl to enjoy fresh flavors and textures. For an added crunch, top with a handful of toasted nuts or seeds. If preparing ahead, keep the avocado separate to avoid browning until just before serving.
