- 1.Rinse 1/2 cup of quinoa under cold water using a fine-mesh sieve to remove any bitterness. Cook the quinoa in a small saucepan with 1 cup of water over medium heat. Once it reaches a boil, reduce to a simmer, cover, and cook for 15 minutes until all water is absorbed and quinoa is fluffy. If water remains, continue cooking uncovered. Let cool slightly.
- 2.While the quinoa is cooking, halve 1 cup of cherry tomatoes and dice 1 small avocado. Squeeze the juice of 1 lime over the avocado to prevent browning and enhance flavor. This also adds a zesty brightness to the dish.
- 3.In a mixing bowl, combine the cooked quinoa, diced avocado, and cherry tomatoes. Pour over 2 tbsp of extra virgin olive oil. Stir gently with a spatula to combine without mashing the avocado.
- 4.Adjust seasoning with salt and pepper to taste. The olive oil adds richness while the lime juice provides acidity; balance to your taste preferences. If the mixture is too dry, a small splash of olive oil can correct this.
