Instructions
- 1.In a mixing bowl, combine 1 cup of cauliflower florets with 1/4 cup of plain yogurt and 1 tablespoon of tandoori spice mix. Mix until the cauliflower is evenly coated. This will both marinate the florets and impart a rich, aromatic flavor.
- 2.Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Spread the marinated cauliflower in a single layer on the sheet. Roast for 15 minutes or until the cauliflower is tender and the edges are slightly charred. This step gives it a smoky, authentic tandoori taste.
- 3.While the cauliflower roasts, heat a skillet over medium-high heat. Warm the 4 small corn tortillas for about 30 seconds on each side until they are pliable and have slight browning. This enhances their flavor and texture, making them soft but not crispy.
- 4.Once the cauliflower is done, remove it from the oven and let it cool slightly. Divide the roasted cauliflower among the corn tortillas. Top each taco with a sprinkle of the chopped cilantro for a fresh, aromatic finish.
- 5.If desired, drizzle a little extra yogurt over the top for a creamy contrast to the spicy cauliflower. Serve immediately to enjoy the best texture and flavor combination.
