Instructions
- 1.Preheat your oven to 400°F (200°C). Spread the drained and rinsed chickpeas on a clean kitchen towel and gently pat them dry to remove excess moisture. This will help achieve a crispy texture when roasted. If the chickpeas are too wet, they may steam instead of roast.
- 2.In a mixing bowl, combine the chickpeas with olive oil, ensuring each chickpea is evenly coated. Olive oil helps in roasting by introducing a golden brown finish and crisp exterior. Add the ground sumac and a pinch of salt to the chickpeas, and toss them until they are evenly seasoned.
- 3.Spread the seasoned chickpeas on a baking sheet in a single layer, ensuring they are not overcrowded. This will allow hot air to circulate around each chickpea, promoting even roasting. Roast in the preheated oven for about 20-25 minutes, or until they appear golden and crispy. Stir them halfway through to ensure even cooking.
- 4.While the chickpeas are roasting, prepare the tahini drizzle. In a small bowl, mix the tahini with a little water to thin it slightly, creating a smooth, pourable consistency. If it’s too thick, add more water gradually until it achieves a creamy texture. Season with salt to taste.
- 5.Remove the chickpeas from the oven and allow them to cool slightly. Plate the chickpeas and drizzle generously with the prepared tahini. For added flavor and presentation, sprinkle a bit more sumac on top before serving for a tangy finish. If the chickpeas are not crispy enough, return them to the oven for another 5 minutes.
