Instructions
- 1.Start by cutting 200g of paneer into cubes. Pat them dry with a paper towel to remove excess moisture, which helps in better browning during cooking. Toss the paneer cubes with 1 tbsp of chaat masala until evenly coated, ensuring each piece has a good amount of spice on it.
- 2.Heat 2 tbsp of vegetable oil in a non-stick pan over medium heat. Add the paneer cubes and cook them until they become golden brown on all sides, turning them gently to ensure they don’t break. This should take about 5-7 minutes. If the paneer starts sticking, lower the heat slightly and continue cooking to achieve the right texture.
- 3.In the same pan, add 1/2 cup of thinly sliced red onions. Sauté them until the onions are soft and slightly caramelized, which should take about 3-4 minutes. This step enhances the sweetness and balances the spice of the chaat masala perfectly. If the onions start burning, add a splash of water to deglaze the pan.
- 4.Warm a wrap or Indian flatbread of choice over a low flame or on a skillet. This softens the bread and makes it easier to roll. You want it pliable enough to encase the filling without breaking.
- 5.Spread 1/4 cup of mint chutney evenly over the warmed wrap. Pile the spiced paneer and onion mixture into the center. Roll the wrap tightly, enclosing all the delicious contents within. Serve immediately to enjoy the contrast of textures and flavors at their best.
