Instructions

  1. 1.
Begin by heating a non-stick pan over medium heat and adding the cubed paneer. Sauté the paneer until it turns golden brown on most sides. This process should take about 5-7 minutes. Browning adds a rich flavor and a crispy texture to the paneer. If the paneer begins sticking, add a teaspoon of water rather than oil to deglaze the pan.
  2. 2.
Once the paneer is golden, add in the peas and sprinkle the garam masala evenly over the mixture. Stir to combine and cook for another 2-3 minutes, allowing the spices to toast and the peas to become tender. Watch for the peas to become bright green, a sign they have absorbed the spice.
  3. 3.
Lower the heat and stir in the yogurt. Mix the ingredients well to ensure the yogurt coats the paneer and peas thoroughly. This adds creaminess and a slight tang to the filling. Let the mixture simmer for about 2 minutes until slightly thickened. If the mixture seems too dry, gradually add a little more yogurt.
  4. 4.
Warm the whole wheat tortillas on a separate dry skillet over medium heat for about 30 seconds on each side, ensuring they become pliable and slightly browned. This prevents them from breaking when folded.
  5. 5.
Place the paneer mixture in the center of each tortilla, folding in the sides, and then roll them up to form pockets. Serve immediately for a warm, delicious snack. If preparing ahead, wrap tightly in foil to retain warmth.
