Instructions
- 1.Begin by heating a non-stick pan over medium heat and adding the cubed paneer. Sauté the paneer until it turns golden brown on most sides. This process should take about 5-7 minutes. Browning adds a rich flavor and a crispy texture to the paneer. If the paneer begins sticking, add a teaspoon of water rather than oil to deglaze the pan.
- 2.Once the paneer is golden, add in the peas and sprinkle the garam masala evenly over the mixture. Stir to combine and cook for another 2-3 minutes, allowing the spices to toast and the peas to become tender. Watch for the peas to become bright green, a sign they have absorbed the spice.
- 3.Lower the heat and stir in the yogurt. Mix the ingredients well to ensure the yogurt coats the paneer and peas thoroughly. This adds creaminess and a slight tang to the filling. Let the mixture simmer for about 2 minutes until slightly thickened. If the mixture seems too dry, gradually add a little more yogurt.
- 4.Warm the whole wheat tortillas on a separate dry skillet over medium heat for about 30 seconds on each side, ensuring they become pliable and slightly browned. This prevents them from breaking when folded.
- 5.Place the paneer mixture in the center of each tortilla, folding in the sides, and then roll them up to form pockets. Serve immediately for a warm, delicious snack. If preparing ahead, wrap tightly in foil to retain warmth.
