Instructions

  1. 1.
Begin by rinsing 1/2 cup of quinoa under cold water to remove any bitterness. In a small pot, combine the quinoa with 1 cup of water and a pinch of salt. Bring it to a boil over medium heat, then reduce to a simmer. Cover the pot and let it cook until all the water is absorbed and the quinoa is tender, about 15 minutes. Remove from heat and let it sit, covered, to fluff up.
  2. 2.
While the quinoa is cooking, season the 6 oz chicken breast with ground cumin and a sprinkle of salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once the oil is shimmering, place the chicken breast in the skillet. Cook for about 6 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  3. 3.
In the same skillet, add the remaining tablespoon of olive oil. Introduce the drained black beans and gently stir them. Reduce the heat to medium and allow them to heat up, absorbing the flavors from the skillet. Cook until they are warmed through and begin to slightly crisp, about 5 minutes.
  4. 4.
Once the quinoa is ready, use a fork to fluff it up gently. In a large bowl, combine the cooked quinoa and the warmed black beans. Mix them together carefully to distribute the flavors evenly.
  5. 5.
Assemble the bowl by layering the quinoa and bean mixture in the bottom. Top it with the sliced chicken breast, arranging it neatly for presentation. Drizzle any juices left in the skillet over the top for added flavor. Serve immediately for the best texture and taste.
