    Preheat the oven to 400°F (200°C). In a mixing bowl, toss the cubed sweet potato with 1 tablespoon of olive oil and half a teaspoon of dried thyme. Spread them out on a baking sheet, ensuring they are in a single layer. Roast in the oven for about 20 minutes until they are tender and start to caramelize on the edges.

    While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced chicken breast, and sprinkle the remaining dried thyme over it. If the chicken releases too much liquid, increase the heat slightly to ensure it browns properly.
