- 1.Preheat the oven to 400°F (200°C). In a mixing bowl, toss the cubed sweet potato with 1 tablespoon of olive oil and half a teaspoon of dried thyme. Spread them out on a baking sheet, ensuring they are in a single layer. Roast in the oven for about 20 minutes until they are tender and start to caramelize on the edges.
- 2.While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced chicken breast, and sprinkle the remaining dried thyme over it. Cook the chicken for about 10-12 minutes, stirring occasionally, until the meat is browned and cooked through with no pink remaining. If the chicken releases too much liquid, increase the heat slightly to ensure it browns properly.
- 3.Once the chicken is cooked, reduce the heat to low and drizzle the honey over it. Stir well to ensure the chicken pieces are evenly coated. Cook for an additional 2 minutes to allow the honey to glaze and slightly thicken over the chicken.
