⏱️ Cooking Time: 25 minutes | 🍽️ Servings: 1

Instructions

  1. 1.
Begin by heating the olive oil in a non-stick skillet over medium-high heat. This forms the base for searing the salmon, ensuring it doesn't stick and develops a golden crust. Place the salmon fillet in the skillet, and allow it to cook undisturbed for about 3-4 minutes on each side. Watch for the edges to become opaque, indicating a perfectly seared texture. Flip carefully to avoid breaking the fillet. Once done, remove from heat and set aside.
  2. 2.
In the same skillet, add the halved cherry tomatoes. Keep the heat on medium. Sauté the tomatoes until they start to soften and release some juices, approximately 2-3 minutes. This will create a lovely, slightly saucy base with a bit of acidity from the tomatoes.
  3. 3.
Add the cooked lentils to the skillet with the tomatoes. Stir to combine, allowing the lentils to warm through and absorb some of the fluid from the tomatoes, enhancing their taste. This step not only combines flavors but also makes sure the lentils are perfectly warm throughout.
  4. 4.
Squeeze over the lemon juice, stirring immediately to integrate. The lemon juice brightens the entire dish, balancing the flavors with a hint of citrus sharpness. If your mixture looks too dry, add a small splash of water or stock to loosen it up.
  5. 5.
To serve, plate the lentils and tomatoes as a bed, placing the seared salmon on top. Drizzle any remaining sauce from the skillet over the top. Season with salt and pepper to taste if desired. Enjoy while warm for the best combination of textures and flavors. If the salmon doesn't flake easily, it may need additional cooking time on low heat.
