    Begin by cooking the udon noodles according to package instructions in a pot of boiling water. Take care to stir occasionally to prevent them from sticking together. Once they are soft and chewy, approximately 8 minutes, drain and set aside, reserving a 1/4 cup of the cooking water.

    In a small mixing bowl, combine the white miso paste with the reserved noodle water. Stir until the miso is completely dissolved. This will create a smooth and flavorful base for the noodles.

    In a medium-sized skillet, heat the sesame oil over medium heat until it is shimmering but not smoking. Add the chopped scallions and sauté them for about 1 minute, until they become fragrant and slightly tender.
