    Rinse 1/4 cup of quinoa under cold water using a fine mesh strainer to remove any bitterness. Combine with 1/2 cup of water in a small pot and bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and has absorbed the water. Fluff with a fork and set aside.

    While the quinoa is cooking, wash a handful of fresh spinach leaves under running water and pat them dry with a clean towel. Heat a small non-stick skillet over medium heat, add the spinach, and sauté for 2-3 minutes until wilted. Spinach wilts quickly; keep stirring to prevent burning. Remove the pan from heat once the leaves are soft and vibrant green.

    Zest an orange and then cut it in half. Squeeze the juice into a small bowl, making sure to strain any seeds. This fresh juice will form the base of the citrus dressing. Add a pinch of the zest to the juice for enhanced flavor. Stir the juice to ensure it's well-mixed.
