Instructions
- 1.Begin by heating a skillet over medium heat and adding 1 tablespoon of extra virgin olive oil. This will prevent sticking and ensure even cooking, imparting a delicate flavor to the chicken. Once the oil is shimmering, lay the chicken breast into the skillet. It's crucial to allow the chicken to sear properly before attempting to move it—look for a golden brown crust forming after about 5-7 minutes.
- 2.While the chicken cooks, in a small bowl, combine the fresh lemon juice with ground turmeric. This mixture infuses the dish with vibrant color and zingy flavor, complimenting the chicken beautifully. Flip the chicken with tongs and immediately drizzle the lemon-turmeric mixture over it. Lower the heat to medium-low and cover the skillet. This will trap steam and help the chicken cook through gently, retaining moisture.
- 3.After roughly 5 minutes, uncover the skillet and test the chicken's doneness by cutting into the thickest part of the breast. Juices should run clear, and the interior should be white throughout. Remove the chicken from the skillet once cooked. Allowing it to rest for a couple of minutes will redistribute the juices, keeping the meat tender.
- 4.In the same skillet with the remaining sauce, add 1 cup of spinach. Stir the leaves quickly until they wilt, soaking up the leftover lemon-turmeric flavors. This step only needs about 1-2 minutes over low heat. The spinach should appear bright green and slightly reduced in size.
- 5.Plate the chicken with the wilted spinach. Spoon any juices from the skillet over the dish before serving. For added depth, garnish with a sprinkle of black pepper or additional lemon zest. This can balance the richness and enhance the herbal notes.
