⏱️ Cooking Time: 25 minutes | 🍽️ Servings: 1
Instructions
- 1.Start by cooking the quinoa. In a small pot, combine 1/2 cup of rinsed quinoa with 1 cup of water. Bring it to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the quinoa is fluffy and all the water is absorbed. Fluff with a fork and set aside.
- 2.While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a spatula, until no longer pink, about 5-7 minutes. To ensure even cooking, spread the meat out across the pan. Once cooked, add 1 teaspoon of dried thyme, stirring until evenly coated and fragrant.
- 3.In the same skillet, add 1 cup of baby spinach to the cooked turkey. Sauté gently until wilted, about 2-3 minutes. The spinach will significantly reduce in volume and should appear soft and dark green.
- 4.Combine the cooked quinoa with the turkey and spinach mixture. Stir thoroughly to ensure all ingredients are well distributed. Season with salt and pepper to taste, adjusting according to preference. If too dry, add a splash of water or more olive oil to moisten.
- 5.Serve the turkey mixture in a bowl, ensuring an even distribution of turkey, quinoa, and spinach in each bite. For added flavor, drizzle with a touch of your favorite hot sauce or a squeeze of lemon juice.
