Instructions

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch, which could cause stickiness during cooking. Drain well and set aside for later use.

    In a medium saucepan, heat the olive oil over medium heat until shimmering. Add the diced carrots and sauté for about 3 minutes until they start to soften. This will enhance the natural sweetness and bring out more flavor.

    Add the peas to the pan and continue cooking for another 2 minutes, stirring occasionally. The peas should turn bright green, showing they are cooked but still crisp.

    Sprinkle the saffron threads into the pan, and immediately add the drained rice. Stir gently to coat the rice and vegetables with the saffron-infused oil. This will ensure an even fragrance throughout the dish.

    Add 1 cup of water to the pan and bring it to a boil. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-18 minutes. You'll know it’s done when the rice is tender and has absorbed all the liquid. If the rice isn't fully cooked and the liquid is gone, add a tablespoon of water and cook for a few more minutes.
