- 1.Rinse the basmati rice under cold water until the water runs clear to remove excess starch, which could cause stickiness during cooking. Drain well and set aside for later use.
- 2.In a medium saucepan, heat the olive oil over medium heat until shimmering. Add the diced carrots and sauté for about 3 minutes until they start to soften. This will enhance the natural sweetness and bring out more flavor.
- 3.Add the peas to the pan and continue cooking for another 2 minutes, stirring occasionally. The peas should turn bright green, showing they are cooked but still crisp.
- 4.Sprinkle the saffron threads into the pan, and immediately add the drained rice. Stir gently to coat the rice and vegetables with the saffron-infused oil. This will ensure an even fragrance throughout the dish.
- 5.Add 1 cup of water to the pan and bring it to a boil. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-18 minutes. You'll know it’s done when the rice is tender and has absorbed all the liquid. If the rice isn't fully cooked and the liquid is gone, add a tablespoon of water and cook for a few more minutes.
