- 1.Start by washing a generous handful of fresh spinach leaves thoroughly under cold water to remove any dirt or grit. Shake off the excess water and dry them using a clean kitchen towel. Heat a non-stick skillet over medium heat and add the spinach. Cook, stirring frequently, until the leaves wilt and all the moisture evaporates, about 3 to 4 minutes. Transfer the wilted spinach to a cutting board, allow it to cool slightly, then chop finely.
