Instructions

  1. 1.
Rinse the quinoa under cold water using a fine-mesh sieve. This helps remove the natural coating, saponin, which can make quinoa taste bitter. Add the quinoa to a small saucepan with 1 cup of water. Bring to a boil, then reduce the heat to low and cover. Simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. If any water remains, drain it off. Fluff the quinoa with a fork to separate the grains.
  2. 2.
While the quinoa cooks, prepare the other ingredients. Slice the cherry tomatoes in half and dice the avocado. Rinse the black beans well to remove any excess sodium from the canning liquid. Pat them dry with a paper towel to prevent them from becoming mushy.
  3. 3.
Once the quinoa is ready, transfer it to a bowl and let it cool slightly. This will help the ingredients mix well without the avocado becoming overly soft. Once it's cooled, add the halved cherry tomatoes, diced avocado, and black beans.
  4. 4.
Drizzle the lime juice over the top of the bowl. The lime juice adds a refreshing zest and prevents the avocado from browning. Gently toss all the ingredients together until they are well combined. Taste and adjust the lime juice if needed; you want a balanced flavor to enhance the natural sweetness of the tomatoes and creaminess of the avocado.
  5. 5.
Serve immediately as a single portion. If you prefer a chilled dish, you can refrigerate the mixture for about 15 minutes before serving. If storing leftovers, keep them in an airtight container in the fridge and consume within a day for optimum freshness. If the avocado browns naturally, simply stir it well to refresh the appearance.
