Instructions
- 1.Start by seasoning the salmon fillet with paprika on both sides, ensuring the fish is evenly coated. This not only provides flavor but also adds a golden color when cooked.
- 2.In a medium skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil shimmers, place the salmon fillet skin-side down if it has skin. Cook for 3-4 minutes until the edges look opaque and the bottom is golden brown. Carefully flip and cook for another 2-3 minutes on the other side, adjusting the time based on the thickness. This ensures the fish is flaky and tender. Remove from the skillet and set aside.
- 3.Reduce the skillet heat to medium and add the remaining tablespoon of olive oil. Wait until the oil warms up, then add the minced garlic. Sauté for about 30 seconds until fragrant, taking care not to let it burn, which can make the dish bitter.
- 4.Add the fresh spinach to the skillet. Using a pair of tongs or a spatula, toss the spinach in the garlicky oil until it wilts, about 2 minutes. The leaves should be bright green and just tender, retaining some of their structure.
- 5.To serve, plate the garlicky spinach as a bed and place the salmon fillet on top. For extra flavor, drizzle any remaining oil from the skillet over the salmon. Enjoy!
