Instructions
- 1.Preheat the oven to 400°F (200°C). Toss the halved baby potatoes in a bowl with the olive oil, ensuring each piece is evenly coated. Sprinkle with half of the sea salt and half of the fresh dill. Spread the potatoes in a single layer on a parchment-lined baking sheet. Bake for 20 minutes until the edges are crispy and golden brown.
- 2.While the potatoes are baking, prepare the salmon. Pat the salmon fillet dry with a paper towel to ensure a good sear. Season both sides with the remaining sea salt. Heat a non-stick skillet over medium-high heat, and place the salmon skin-side down. Cook for 4-5 minutes until the skin is crispy and the salmon easily releases from the pan.
- 3.Carefully flip the salmon and cook for another 2-3 minutes or until the flesh turns opaque and flakes easily with a fork. Remove from the heat and sprinkle the remaining dill over the top for a fresh herbal finish.
- 4.Check the potatoes after 20 minutes; they should be tender inside and crisp on the outside. If not, give them an additional 5 minutes in the oven while monitoring closely to avoid burning.
- 5.Serve the salmon alongside the roasted potatoes, garnish with a sprig of dill. Enjoy the simplicity and freshness of the dish. If the potatoes seem too dry, drizzle with a touch more olive oil before serving.
