    Preheat the oven to 400°F (200°C). Toss the halved baby potatoes in a bowl with the olive oil, ensuring each piece is evenly coated. Sprinkle with half of the sea salt and half of the fresh dill. Spread the potatoes in a single layer on a parchment-lined baking sheet. Bake for 20 minutes until the edges are crispy and golden brown.

    While the potatoes are baking, prepare the salmon. Pat the salmon fillet dry with a paper towel to ensure a good sear. Season both sides with the remaining sea salt. Heat a non-stick skillet over medium-high heat, and place the salmon skin-side down. Cook for 4-5 minutes until the skin is crispy and the salmon easily releases from the pan.
