Instructions
- 1.Preheat your oven to 375°F (190°C). Place the salmon fillet on a baking sheet lined with parchment paper. Drizzle 1 teaspoon of olive oil over the fillet, and sprinkle it with half of the chopped dill. This ensures that the salmon remains moist and flavorful during baking. Squeeze half a teaspoon of lemon juice on top—this brightens the flavor. Let it bake for approximately 15-18 minutes, or until the salmon is opaque and flakes easily with a fork.
- 2.While the salmon bakes, heat the remaining 2 teaspoons of olive oil in a skillet over medium heat. Add the cubed cooked beets. Allow them to sauté for about 5 minutes. Stir occasionally to ensure even heating and to prevent sticking. The goal is to warm them through and enhance their natural sweetness.
- 3.Once the beets are warm, sprinkle them with the remaining dill and a half teaspoon of lemon juice. This will give them a fresh, vibrant kick. Toss them gently to coat evenly; ensure they don't break apart. Cook for an additional 2 minutes.
- 4.Remove the salmon from the oven and let it rest for a couple of minutes. This resting period allows the juices to redistribute, making the fish more succulent.
- 5.Serve the salmon alongside the warm beets. For presentation, sprinkle any leftover dill on the dish. If desired, add a lemon wedge for an extra citrus zing. Enjoy this dish warm, appreciating the balance of earthy and fresh flavors.
