    Preheat your oven to 375°F (190°C). Cut the top off the bell pepper and remove the seeds and membranes inside, being careful not to tear the sides. Lightly brush the exterior with 1 tablespoon of olive oil to enhance roasting.

    In a bowl, combine the cooked quinoa, crumbled feta cheese, and chopped spinach. Add 1 tablespoon of olive oil to the mix for added moisture and flavor. Stir until the ingredients are evenly distributed. Ensure the mixture is well combined, as this will help it hold together when stuffed.
