    Start by cooking the quinoa. In a small saucepan, bring 1 cup of water to a boil. Add the rinsed quinoa, cover, and reduce the heat to low. Let it simmer for 15 minutes or until all the water is absorbed and the quinoa is fluffy. Fluff with a fork and set aside.

    While the quinoa is cooking, prepare the chicken. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breast with salt and pepper on both sides.
