Instructions
- 1.Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Once the oil shimmers, add the garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it as it can turn bitter quickly.
- 2.Add the shrimp to the skillet. Cook for 2-3 minutes on the first side, or until they start turning pink and opaque. Flip the shrimp and continue cooking for another 1-2 minutes. Remove the shrimp from the skillet and set aside. They should be tender and not rubbery.
- 3.In the same skillet, add the remaining tablespoon of olive oil along with the sliced red bell pepper. Stir-fry for about 3-4 minutes until the peppers are tender but still crisp. They should retain their bright color for best flavor and appearance.
