Instructions

    Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Once the oil shimmers, add the garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it as it can turn bitter quickly.

    Add the shrimp to the skillet. Cook for 2-3 minutes on the first side, or until they start turning pink and opaque. Flip the shrimp and continue cooking for another 1-2 minutes. Remove the shrimp from the skillet and set aside. They should be tender and not rubbery.

    In the same skillet, add the remaining tablespoon of olive oil along with the sliced red bell pepper. Stir-fry for about 3-4 minutes until the peppers are tender but still crisp. They should retain their bright color for best flavor and appearance.
