Instructions

    Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil shimmers, add the diced chicken breast. Season with half the dried thyme and a pinch of salt. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Use a fork to poke the chicken to check if it’s cooked; the juices should run clear.

    Remove the chicken from the skillet and set it aside. Add the remaining olive oil to the skillet, followed by the minced garlic. Sauté the garlic until fragrant, about 30 seconds. Be careful not to burn it, as this will make it bitter.
