⏱️ Cooking Time: 20 minutes | 🍽️ Servings: 1

Instructions

  1. 1.
Begin by heating olive oil in a non-stick skillet over medium heat. Once the oil is shimmering, add the salmon fillet. Cook for about 3-4 minutes on each side until it is opaque and flaky. Use a fork to gently flake the salmon into pieces while it cooks, ensuring it is fully cooked through. Adjust the temperature as needed to prevent burning or sticking.
  2. 2.
Crack the eggs into a bowl and whisk them until well mixed. Season with salt. For a creamier texture, whisk vigorously to incorporate air, which can make the eggs fluffier once cooked.
  3. 3.
With the salmon still in the pan, pour the beaten eggs over. Gently stir with a spatula, ensuring the eggs and salmon mingle without mashing the salmon pieces. Reduce the heat to low to prevent the eggs from becoming rubbery and stir occasionally until the eggs are just set, with a creamy and soft consistency.
  4. 4.
Add the spinach to the mix. Stir to combine, allowing the residual heat to wilt the spinach gently. If the spinach isn’t wilting quickly enough, cover the pan for a minute or two.
  5. 5.
Once the spinach is wilted and the eggs are cooked through but still moist, remove the pan from the heat. Taste and adjust seasoning as desired. If the eggs seem overcooked or too dry, a small knob of butter can be added at the end to restore some moisture and creaminess.
