Instructions

  1. 1.
Bring a pot of water to a boil and cook the soba noodles according to the package instructions, about 7 minutes. Stir occasionally to prevent sticking. Once cooked, drain and rinse under cold water to stop the cooking process and remove excess starch. This ensures the noodles remain firm and are not gummy.
  2. 2.
In a medium pan over medium-high heat, add the sesame oil. Once the oil shimmers, add the grated ginger and stir for about 30 seconds until fragrant. This technique releases the ginger's aromatic oils, enhancing the dish's flavor.
  3. 3.
Add the shrimp to the pan in a single layer. Cook for about 2-3 minutes on each side until they turn pink and opaque. Avoid overcrowding the pan to ensure even cooking and avoid steaming.
  4. 4.
Reduce the heat to low and pour in the soy sauce. Toss the shrimp gently to coat with the soy-ginger mixture, cooking for another minute until the sauce thickens slightly and clings to the shrimp. Be careful not to overcook, as this can make the shrimp rubbery.
  5. 5.
Combine the cooked noodles with the shrimp and sauce in the pan. Mix well to ensure the noodles are evenly coated with the sauce. If the noodles seem dry, add a splash of water or soy sauce to moisten and enhance flavor. Serve warm.
