Instructions
- 1.Begin by draining the tofu thoroughly. Place the 200g of tofu between two layers of paper towels and gently press with a cutting board or plate to remove excess moisture. This ensures that the tofu absorbs more flavors and becomes crispier when cooked.
- 2.In a small bowl, combine 2 tablespoons of soy sauce and 1 tablespoon of finely grated ginger. Stir well to mix the flavors. This will be your marinade that infuses the tofu with a savory zing.
- 3.Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Once the oil is shimmering, carefully add in the cubed tofu. Sauté the tofu for about 6-8 minutes, turning occasionally, until the cubes are golden brown and slightly crispy on the edges. This gives the tofu a pleasant texture contrast.
- 4.Pour the ginger-soy marinade over the tofu in the skillet. Stir continuously to coat the tofu evenly with the marinade. Allow it to cook for another 2-3 minutes until the sauce thickens slightly and clings to the tofu, infusing it with bold flavors.
- 5.Finally, add 1 cup of baby spinach to the skillet. Toss everything frequently for about 1-2 minutes until the spinach wilts but retains a bright green color. This step adds nutrients and a fresh component to the dish. Serve immediately, savoring the blend of savory tofu and fresh spinach.
