- 1.Begin by draining the tofu and patting it dry with a paper towel to remove excess moisture. Cut the tofu into 1-inch cubes. This ensures they cook evenly and develop a nice texture when fried.
- 2.In a medium-sized pan, heat the vegetable oil over medium-high heat. Once the oil is shimmering, add the tofu cubes, ensuring they are spread out in a single layer. Fry the tofu for about 5 minutes, turning occasionally, until each side is golden brown and crispy. If the tofu sticks to the pan, wait another minute or so before turning - this usually indicates it's not ready to release.
- 3.While the tofu is frying, mix the soy sauce and grated ginger in a small bowl. This will act as your glaze, imparting both a salty and aromatic ginger flavor to the tofu.
- 4.Once the tofu is evenly browned, decrease the heat to medium and pour the ginger soy mixture over the tofu. Stir immediately to coat all tofu pieces evenly. Cook for another 2 minutes until the sauce thickens slightly and clings to the tofu.
