Instructions
- 1.Rinse the quinoa under cold water to remove any bitterness and enhance its nutty flavor. Add it to a saucepan with 1 cup of vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer. Cook for about 15 minutes until all the liquid is absorbed and the quinoa is fluffy. If the quinoa is undercooked, add a splash more broth and continue to cook until tender.
- 2.While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the chickpeas to the skillet, stirring frequently. Cook them for about 5-7 minutes until they start to become golden and slightly crispy. Ensure they're evenly coated with oil for an even cook.
- 3.Juice the lime and add it to the chickpeas. The acidity will help lift the flavors. Stir the chickpeas until they are well coated in lime juice. Allow the chickpeas to cook for an additional 2-3 minutes, letting the lime juice reduce slightly and become a glaze.
- 4.Once the quinoa is ready, fluff it with a fork and transfer it to a serving plate. Spoon the lime-glazed chickpeas over the quinoa. If you like, garnish with extra lime wedges or freshly chopped herbs for added brightness.
- 5.Taste the final dish for seasoning. If needed, adjust with a little more lime juice or a sprinkle of salt. Serve it warm as a vibrant, satisfying single-serving meal.
