Instructions
- 1.Preheat a skillet over medium heat and add 1 tablespoon of olive oil. Swirl the pan to coat the bottom evenly, ensuring the oil is hot but not smoking. This helps prevent sticking and provides a nice sear on the salmon.
- 2.Season the salmon fillet with a pinch of salt and pepper. Place it skin-side down in the hot skillet. Allow it to cook undisturbed for about 4-5 minutes until the skin is crispy and the flesh begins to change color halfway up the fillet. Flip the salmon and cook for another 3 minutes until the flesh is opaque and flakes easily with a fork.
- 3.Remove the salmon from the skillet and set it aside. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic as it can become bitter.
- 4.Add the fresh spinach to the skillet, tossing lightly in the garlic oil. Cook for about 2 minutes until the spinach is wilted. Drizzle lemon juice over the spinach, stirring to combine and infuse the bright citrus flavor throughout.
- 5.Serve the salmon over the bed of wilted spinach. Spoon any remaining pan juices over the dish for additional flavor. If the spinach isn't wilted enough, keep sautéing over low heat until it reaches your desired texture.
