- 1.Rinse the quinoa under cold water to remove any bitterness. Bring 1 cup of water to a boil in a small saucepan, add the quinoa, cover, and reduce the heat to low. Cook for about 15 minutes until the water is absorbed and the quinoa is fluffy. Fluff with a fork and set aside.
- 2.While the quinoa is cooking, season the chicken breast with salt and pepper. Heat the olive oil in a skillet over medium-high heat. Add the chicken and cook for about 6 minutes on each side or until the chicken is golden brown and cooked through. The internal temperature should reach 165°F. Remove from the skillet and let it rest for a few minutes before slicing.
