Instructions
- 1.In a medium bowl, combine the pre-cooked white cornmeal, water, and salt. Stir well until a smooth dough forms. The dough should be moist but not sticky. If the dough feels too dry, add a teaspoon of water at a time until the right consistency is achieved. Let the dough rest for 5 minutes to fully hydrate.
- 2.Divide the dough into two equal portions and shape each into a flat disc about 1/4 inch thick. This will be your arepa base. Heat a nonstick skillet over medium heat and spray lightly with cooking oil. Cook the arepas for about 4 minutes on each side or until golden brown and slightly puffed. They should sound hollow when tapped gently. Remove and set aside.
- 3.Season the thinly sliced chicken breast with lime juice, lime zest, and a pinch of salt, massaging the flavors into the meat for even coating. Let it marinate for at least 5 minutes, allowing the citrus flavors to penetrate the meat.
- 4.Heat the same skillet over medium-high heat and add the marinated chicken slices. Cook the chicken for about 3 minutes on each side until golden and fully cooked, achieving a crisp exterior. The chicken should be tender and juicy inside with a bright citrus aroma.
- 5.Assemble by placing the chicken on one arepa and topping it with the other. Serve warm and enjoy immediately. If your arepas cool too much before serving, quickly warm them in the skillet to regain that fresh-out-of-the-pan warmth.
