Instructions
- 1.Combine the arepa flour with water in a bowl, mixing until a dough forms. Knead it gently with clean hands until smooth, about two minutes. If it feels too dry or crumbly, add a teaspoon of water at a time until workable. Form into a flat disk, approximately 1/2 inch thick.
- 2.Preheat a non-stick pan over medium heat. Place the arepa disk in the pan and cook for about 5-7 minutes on each side, until a golden crust forms. The arepa should sound hollow when tapped. Adjust heat if it cooks too quickly to avoid burning while ensuring the interior is cooked through.
- 3.While the arepa cooks, prepare the filling. Spread the refried black beans over one half of the arepa. They should be warm and smoothly spreadable; if too thick, stir in a splash of water and gently heat in a microwave or saucepan until softened.
- 4.Layer the avocado slices on top of the beans. Use a ripe avocado for best texture, ensuring slices are evenly distributed. Lightly season the avocado with salt and a hint of lime juice if desired to enhance its flavor.
- 5.Sprinkle crumbled queso fresco over the avocado. Gently press the two sides of the arepa together, creating a sandwich. Serve warm, optionally slicing in half for easier handling.
