Instructions

    Begin by heating the olive oil in a medium-sized skillet over medium heat. Once the oil is shimmering, add the thinly sliced chicken breast. Cook for about 4-5 minutes on each side. You want the chicken to be golden brown on the outside and cooked through. If you're unsure, make a small cut into one piece to ensure it's no longer pink inside.

    While the chicken is cooking, prepare the spinach by washing it thoroughly and drying it with a paper towel. Fresh spinach can still have soil in the leaves, so make sure it’s clean. Once the chicken is cooked, remove it from the skillet and set it aside on a plate.

    In the same skillet, reduce the heat to low and immediately add the fresh spinach. Stir the spinach gently in the remaining oil for about 2-3 minutes until it wilts completely. Spinach reduces a lot in volume as it cooks, so don’t be alarmed by the large initial amount.

    Add the cream cheese to the wilted spinach, stirring continuously, until the cream cheese is melted and forms a smooth, creamy sauce. This should take about 1-2 minutes. If the sauce seems too thick, you can add a tablespoon of water to reach your desired consistency.
