Instructions

  1. 1.
Begin by heating 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the sliced chicken breast. Cook the chicken for about 6-8 minutes, turning occasionally, until it is golden brown on the outside and cooked through to an internal temperature of 165°F. Transfer the cooked chicken to a plate and set aside.
  2. 2.
In the same skillet, add the lemon juice and zest, scraping up any browned bits from the bottom of the pan. This adds flavor. Pour in the heavy cream, stirring to combine with the lemon mixture. Allow the sauce to bubble gently, stirring frequently, until it reduces slightly and thickens enough to coat the back of a spoon.
  3. 3.
Reduce the heat to low and return the chicken to the skillet, along with any juices that have accumulated on the plate. Add the fresh spinach on top of the chicken. Cover the skillet and cook for 2-3 minutes, or until the spinach has wilted.
  4. 4.
Stir everything together to fully combine the chicken, spinach, and creamy sauce. Taste your dish and adjust for seasoning, adding salt and pepper to taste. If the sauce seems too thick, you can add a splash of water or more cream to reach your desired consistency.
  5. 5.
Serve immediately, making sure that the chicken is tender and well-coated in sauce, and that the spinach is vibrant and just wilted. If the sauce separates, whisk in a bit more cream over low heat while stirring continuously to bring it back together.
