  • 1 large egg
  • 2 tablespoons grated Parmesan cheese

⏱️ Cooking Time: 15 minutes | 🍽️ Servings: 1

Instructions

  1. 1.
Heat a non-stick skillet over medium heat and add the olive oil. Swirl the pan to coat the bottom evenly. Add the chopped spinach and sprinkle with salt. Cook, stirring constantly, until the spinach is wilted and bright green, about 2 minutes. If the spinach releases water, continue cooking until the liquid evaporates.
  2. 2.
Using a spatula, form the wilted spinach into a small nest shape in the center of the skillet, leaving a small well in the middle. This will create a spot for the egg to sit securely and cook evenly. Crack the egg into the center of the spinach nest. Sprinkle the grated Parmesan cheese on top of the egg and the spinach, ensuring even coverage.
  3. 3.
Cover the skillet with a lid and reduce the heat to low. Cook until the egg white is set but the yolk remains slightly runny, about 4-5 minutes. If you prefer a fully-cooked yolk, extend the cooking time by an additional minute or two. Check the egg periodically to prevent overcooking.
  4. 4.
Once the egg is cooked to your desired level, carefully slide the spinach nest onto a plate. If the egg sticks, use a spatula to gently release it from the skillet without breaking the yolk.
  5. 5.
Serve immediately while hot, accompanied by crusty bread or a light side salad. For extra flavor, consider garnishing with freshly cracked black pepper or a sprinkle of red pepper flakes.
