Instructions

    Rinse the red lentils under cold water until the water runs clear. This helps remove excess starch and prevents the lentils from becoming too gummy. Once rinsed, set them aside to drain completely.

    In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. When the oil is shimmering, add the curry powder and sauté for about 1 minute. This helps release the spices' aromas and infuses the oil with flavor.

    Add the rinsed lentils to the saucepan, stirring to coat them in the spiced oil. Pour in the vegetable broth and bring the mixture to a boil. Once it reaches a boil, reduce the heat to low, cover the pan, and let it simmer gently. You’ll know it's ready when the lentils are tender and have absorbed most of the liquid, about 15-20 minutes.

    Pour the coconut milk into the saucepan, stirring to combine. Allow the soup to simmer uncovered over low heat for an additional 5 minutes. This will thicken the soup and meld the flavors together. Stir occasionally to prevent sticking.
