Instructions

  1. 1.
Slice the ripe plantain in half lengthwise, being careful not to cut all the way through. The peel should be easy to remove if the plantain is ripe. Ripeness is key for sweetness and caramelization during cooking.
  2. 2.
In a skillet, heat the butter over medium heat until it melts and begins to bubble. Place the plantain halves cut side down in the butter. Cook for about 5 minutes, or until the plantain is golden brown on the bottom. Use a spatula to gently press down for even browning.
  3. 3.
While the plantain is cooking, evenly sprinkle the sea salt and then carefully flip the plantain halves. Cook the other side for another 5 minutes until the entire plantain is golden and soft. You may need to adjust the heat to prevent burning. If the plantain cooks unevenly or too quickly, lower the heat slightly.
  4. 4.
Once both sides are nicely browned, remove the plantain from the pan and place it on a cutting board. Carefully open the halves to reveal the soft interior. Fill each half with shredded mozzarella cheese, allowing it to melt naturally from the plantain’s heat.
  5. 5.
Serve the cheesy plantain drizzled with sour cream. The sour cream adds a creamy texture and balances the plantain's sweetness. Enjoy immediately while the cheese is gooey and the flavors are perfectly combined.
