Zesty Pan-Seared Cod with Burst Tomatoes

How to make it

Pat the cod fillets dry with a paper towel. Season generously with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium high heat. Once shimmering, carefully place the cod fillets in the pan. Sear for 3 to 4 minutes per side, until golden brown and cooked through. Remove the cod from the skillet and set aside on a plate.

In the same skillet, add the cherry tomatoes. Cook for 5 to 7 minutes, stirring occasionally, until they start to burst and soften.

Squeeze the juice from the lemon over the tomatoes. Stir in the fresh basil. Cook for one minute more.

Serve the seared cod immediately, topped with the warm lemon basil tomato mixture.
