Zesty Chickpea Salad Sandwich
This simple, hearty salad makes a fantastic quick lunch.

How to make it

Get a medium bowl and grab your chickpeas. Mash them up with a fork or a potato masher until they are mostly broken down but still have a bit of texture.

Add the vegan mayonnaise to the mashed chickpeas. Stir it in well, making sure everything is nicely coated.

Now, toss in your finely chopped celery and diced red onion. Give it another good stir to combine all those fresh flavors.

Finish by folding in the fresh chopped dill. Mix gently so the dill is evenly distributed throughout the salad.
