5Zesty Baked Cod with Burst Tomatoes
Enjoy a bright and healthy fish dish that is surprisingly simple to make any night of the week.
How to make it

Preheat your oven to 400°F (200°C). Grab a medium sized baking dish and lightly grease it or line it with parchment paper.

Pat your cod fillets dry with a paper towel. Place them in the prepared baking dish. Scatter the cherry tomatoes around the fish.

Drizzle the olive oil evenly over the cod and tomatoes. Season generously with salt and pepper to your taste.

Slice the lemon into thin rounds. Arrange a few slices on top of each cod fillet and tuck the remaining slices among the tomatoes.

Bake for 12 to 15 minutes, or until the cod is opaque and flakes easily with a fork. The tomatoes should be soft and slightly burst.

Remove from the oven. Tear the fresh basil leaves and sprinkle them over the hot fish and tomatoes before serving. Enjoy right away!
