Preheat your oven to 400°F (200°C). Peel and chop the sweet potatoes into bite sized cubes. You can leave the skins on if you prefer.

Spread the sweet potato cubes on a baking sheet. Drizzle with a tiny bit of oil if you like, and sprinkle with a pinch of salt and pepper. Roast for 25 to 30 minutes, flipping halfway, until they are tender and slightly caramelized.

While the sweet potatoes are roasting, prepare your delicious sauce. In a small bowl, whisk together the creamy peanut butter, maple syrup, and the juice from your fresh lime. Add a tablespoon or two of warm water if the sauce is too thick for drizzling.
