Warm Peanut Chickpea & Kale Stir-fry

How to make it

    Drain and rinse your chickpeas well. Set aside.

    Thinly slice the red bell pepper. Remove the tough stems from your kale and chop it into bite sized pieces.

    In a small bowl, whisk together the peanut butter, soy sauce, and 1/4 cup of warm water until smooth and creamy.

    Heat a large skillet or wok over medium high heat. Add the sliced bell pepper and cook for 3 to 4 minutes until slightly tender crisp.

    Add the chickpeas and kale to the skillet. Cook for another 3 to 5 minutes, stirring occasionally, until the kale is wilted.
