Sunrise Tofu Scramble

This quick and tasty scramble is perfect for a satisfying breakfast or a light dinner any day of the week.

How to make it

    Gently press your block of extra-firm tofu to remove any excess water. Then, crumble it directly into a large skillet over medium heat.

    Cook the crumbled tofu for about 5 minutes, stirring occasionally, until it starts to dry out and lightly brown in places.

    Sprinkle in the nutritional yeast and the ground turmeric. Stir everything really well to make sure all the tofu is coated in that lovely yellow spice and cheesy flavor.

    Add the fresh spinach to the pan. Continue to cook, stirring gently, until the spinach wilts down completely, which usually takes just a couple of minutes.

    Finally, toss in your halved cherry tomatoes. Cook for just one more minute until they are warmed through but still hold their shape. Serve this vibrant scramble immediately and enjoy!
