Sunny Tomato Basil Pasta

This bright and simple pasta dish brings sunshine to your plate in minutes.

How to make it

    Boil water in a large pot for your pasta. Once boiling, add a generous pinch of salt and the linguine. Cook according to package directions until al dente.

    While the pasta cooks, finely mince the garlic. Halve the cherry tomatoes. Tear the basil leaves into smaller pieces if they are large.

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, but do not let it brown.

    Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, gently pressing some tomatoes with the back of your spoon to release their juices, creating a lovely sauce.

    Drain the cooked pasta, reserving about 1/4 cup of the pasta water. Add the drained pasta to the skillet with the tomatoes and garlic. Toss well. If it seems too dry, add a splash of the reserved pasta water. Stir in the fresh basil leaves and the small mozzarella balls. Serve immediately and enjoy!
