How to make it

  1. 1

Dice your chicken breast into bite-sized pieces. Peel and dice the sweet potato into similar small cubes, about half an inch. Chop your red onion finely.

  2. 2

Heat a large nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until it is browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.

  3. 3

Add the diced sweet potato and red onion to the same skillet. You might need a tiny splash of water if it is too dry, but usually a good nonstick pan is fine. Cook, stirring often, until the sweet potato is tender and slightly caramelized, about 10 to 15 minutes.

  4. 4

Return the cooked chicken to the skillet with the sweet potatoes and onions. In a small bowl, whisk together the peanut butter and sriracha with a tablespoon or two of water until it forms a smooth, pourable sauce.

  5. 5

Pour the sauce over the ingredients in the skillet and toss everything gently to coat. Cook for another 2 to 3 minutes, just until the sauce is heated through and coats everything beautifully. Serve hot and enjoy your delicious high-protein meal.
