5Speedy Creamy Broccoli Pasta
A truly satisfying and surprisingly easy pasta dish, bursting with cheesy flavor without any dairy.
How to make it
- 1
First, get your pasta cooking. Bring a large pot of salted water to a boil and cook the penne according to package directions until it is al dente.
- 2
While the pasta is cooking, chop your broccoli into small florets. Steam or boil the broccoli until it is tender crisp, about 3-5 minutes.
- 3
Drain the soaked cashews. In a blender, combine the drained cashews, minced garlic, nutritional yeast, and about 1/2 cup of fresh water. Blend until it is super smooth and creamy, adding a little more water if needed to reach a pourable sauce consistency.
- 4
Once the pasta is ready, drain it, reserving about 1/2 cup of the pasta cooking water.
- 5
Return the drained pasta to the pot. Add the creamy cashew sauce and the steamed broccoli. Toss everything together, adding a splash of the reserved pasta water if the sauce seems too thick. Stir gently to coat all the pasta and broccoli.
- 6
Season with salt and pepper to taste. Serve warm and enjoy your delicious, comforting meal.
