5Speedy Black Bean and Avocado Tostadas
These fresh and flavorful tostadas are a quick, satisfying, and colorful meal for any day of the week.
How to make it
- 1
First, warm your corn tortillas. You can do this in a dry skillet over medium heat for about 30 seconds per side until they are pliable and slightly browned. Alternatively, you can microwave them briefly or toast them in a toaster oven.
- 2
Next, prepare your black beans. Drain and rinse both cans of black beans well. Place them in a small saucepan with a splash of water, or simply microwave them, and heat through until warm.
- 3
While the beans are heating, slice your ripe avocados in half, remove the pit, and scoop out the flesh into a small bowl. Mash them gently with a fork. You can leave them a little chunky for texture.
- 4
Now it is time to assemble your tostadas. Place a warm tortilla on your plate. Spread a generous layer of mashed avocado over the tortilla.
- 5
Spoon a dollop of warm black beans on top of the avocado, followed by a spoonful of fresh salsa. Finish each tostada with a squeeze of fresh lime juice right before serving. Enjoy your delicious and speedy meal.
