Pan-Seared Salmon with Honey-Dijon Glazed Carrots

    Pat your salmon fillets dry with a paper towel. This helps them get a beautiful sear. Season them generously with salt and pepper on both sides.

    Peel and slice your carrots into thin rounds or diagonal pieces. You want them to cook evenly.

    In a small bowl, whisk together the honey and Dijon mustard. This will be your lovely glaze.

    Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillets skin-side down (if they have skin). Sear for about 4-5 minutes until the skin is crispy and golden. If your salmon doesn't have skin, just sear for a nice crust. Flip the salmon and cook for another 3-4 minutes, or until it reaches your desired doneness. Remove the salmon from the pan and set it aside.

    In the same skillet, add the sliced carrots and a small splash of water. Cover and steam the carrots for about 5 minutes until they are tender-crisp. Uncover the pan, let any remaining water evaporate, then pour in your honey-Dijon glaze and stir to coat the carrots. Cook for another 2-3 minutes, letting the glaze thicken slightly and coat the carrots beautifully.
