How to make it

  1. 1

First, get your ingredients ready. Slice the halloumi cheese into 1/2 inch thick pieces. Make sure to pat them dry with a paper towel, this helps them get a nice sear.

  2. 2

Heat a large skillet over medium high heat with about a tablespoon of olive oil. Once hot, add the halloumi slices and sear them for 2 to 3 minutes per side until they are beautifully golden brown and crispy. Take them out of the skillet and set them aside for a moment.

  3. 3

Now, add the trimmed asparagus to the same skillet. Cook them for about 5 to 7 minutes, stirring occasionally, until they are tender-crisp. If your skillet looks a little dry, you can add a tiny splash of water to help them steam a bit.

  4. 4

Return the cooked halloumi to the skillet. Add the halved cherry tomatoes and the pitted kalamata olives. Give everything a good stir.

  5. 5

Finally, squeeze the fresh juice of the lemon over everything in the skillet. Toss gently to combine all those wonderful flavors. Season with a pinch of salt and pepper to your liking. Serve this delicious meal immediately and enjoy!
