First, gently pat your cod fillets very dry with a paper towel. Season both sides generously with a little salt and freshly ground black pepper. This helps them get a lovely sear.

Heat the olive oil in a large non-stick skillet over medium-high heat. Once shimmering, carefully place the cod fillets in the pan. Sear for about 3 to 4 minutes per side, until they are golden brown and flake easily with a fork. Don't overcrowd the pan.

While the fish is cooking, go ahead and halve the cherry tomatoes. Once the cod is cooked through, remove it from the skillet and set aside.

Add the halved cherry tomatoes to the same skillet. Cook for 2 to 3 minutes, stirring gently, until they just begin to soften and burst.
